Rainbow Lunch

Over the past year, I've been reading various books and following various shows to understand healthy eating habits. 
The concept of rainbow lunch is something i heard over a television show and it says that you are supposed to eat veggies of various colors in a day to get the minimum required nutrients. Inspired by those words, I've come up with this lunch plan.
                                           
                                        ***** Beetroot Roti and Cabbage Fry **** 

Prep time: 25 min
Cooking time: 45 min                                                  

Ingredients:
  • For Roti:
    • Grated beetroot
    • Whole wheat flour
    • Warm water
    • Cumin seeds
    • Salt
  • For Curry:
    • Cabbage
    • Carrots
    • Peas
    • Cumin Seeds
    • Shredded coconut
    • Chana dal
    • Curry leaves
    • Coriander powder
    • Salt
    • Turmeric Powder
    • Chili powder
    • Olive oil
    • Garlic
    • Asafoetida (Hing)

  • Roti preparation:
    • Take all the ingredients mentioned in roti into a bowl, start adding the water mindfully while you mix it to into a soft dough.
    • Cover it with a damp cloth and let it rest for 15 min.
    • Cut the dough into small portions, dust each portion with flour and press it to make flat circle.
    • Heat a frying pan, place the roti onto the pan and apply some ghee(optional) toss it around until you see it brown a little bit.
    • Serve it hot with the curry and yoghurt (optional)
  • Curry preparation:
    • Add olive oil onto the frying pan, let it heat for 1 min
    • Add cumin seeds,chopped garlic, chana dal, curry leaves and asafoetida (hing). On medium flame let them splutter and chana dal to brown.
    • Add cut cabbage, carrots and peas. Cover it with a lid and cook it on medium flame.
    • Once the vegetables are half cooked, add turmeric powder and mix it well. Close the lid and cook it again.
    • Add salt, chilli powder and coriander powder, shredded coconut and mix it well. Take it off the stove after 2 minutes of stirring.
    • Serve it with roti.
